Characters people have created - yes...most people generally just purchase such for the textures to use with their own custom/dialed morphs.
All figures need morphs in order to change their base default shape to something else. DAZ just sells such things (like the Morphs++ packages for the latest figures, Mike4 and Vicky4) separate from the base figure....while they often give the base figure away for free from time to time, or at a lower cost.
Example (just pulling these outta thin air - so you can see what all would go into it)
a) You get the Mike4 base figure
b) Decide you like it, but want to change look of body/face, so you get the Morphs ++ pack
c) See a texture that you like for another character, but perhaps not the morphed character itself -- if it's a good deal, get the texture (textures by Jepe are generally a good buy, even if they're sometimes pricey)
Now you have the figure, you have the morphs package to change how he looks, and you have an extra texture to use for your characters.
As far as realistic, many textures are done using photographs of real people - but it also comes into play how you have things setup in the materials room, your lighting and render settings.
If you go to the Poser forum over at Renderosity, do a search for the user name bagginsbill -- you'll find all sorts of great info on material, light, and render tricks to get the most out of your images.
Hair can be hit or miss - some is good, some is...well....so so. It boils down to the transmap/texture....and you just buy the styles you want-like-need. Or you can google for tutorials on how to use the Hair room in Poser (I've never messed with it, so I can't help there)
If you know how to model, then yes, you can make your own clothing for Poser characters. After modeling, you can turn it into dynamic clothing with the cloth room, or you can turn it into the more commonly used conforming clothing (which is a bit more work)....If you don't know how to model things...I'd say take it easy for right now and concentrate on learning how to do things in Poser, then move on to creating your own content. Trying to do too much too soon can often lead to frustration...I've seen many people throw their hands up and walk away from all the resources they paid good money for because they couldn't learn it all in just a day. I've been using Poser since 2004...and I still don't know all there is to know.
Textures can be created in PS or any other such software - generally painted on the UV templates that should generally be included (or available somewhere) when you purchase something or download a freebie. IF there isn't one, then you can generate one by downloading the free version of UVmapper, and exporting out the UV template to paint over (otherwise....no 3D app is going to know what part of a texture goes where on a model...)
Not sure what model you're talking about - but if the man loads as part of the truck (like another prop??), you may not be able to "remove" him in that sense. I'd need to see what the model is before I can help with that one. A preview render, or a link to the model in question would greatly help on this one.
